A rotating monthly coffee subscription designed to bring you a vibrant, and ever-changing coffee experience. Each month, our team intentionally sources and small batch roasts a new coffee to highlight its unique characteristics. This subscription will contain single origins only, and offer a variety of different country of origin, process, and flavor notes.
If you want to try interesting coffees each month, this is the subscription for you.
This subscription will always recur on the 1st of the month. If you are ordering after the 15th of the month, your order will be held until the following month's shipments.
If you order multiple bags per delivery, each bag for that delivery will be the same coffee listed below.
December 2025 Coffee: Mexico Chiapas
Flavor Notes: Chocolate, Nuts, and Citrus
Mexico Chiapas is grown in one of Mexico’s most well-known coffee producing regions. Bordering Guatemala, this highland region is punctuated by steep mountains and dense rainforests. Additionally, the western coast benefits from the Pacific Ocean’s climate, while the eastern portion is colored by that of the Atlantic Ocean. The result is a rich diversity of microclimates intersecting in a relatively compact area.
Mexico Chiapas comes from several producer and exporter partners. Coffees in Chiapas may come from large estates, but the majority are produced by smallholders, usually in association with cooperatives. Most producers hand-pulp their coffees, ferment the beans in small tanks and rake and dry them on small patios on their properties. Parchment is sorted and graded at the dry mill.
