January 2025 Coffee: Uganda Silverback
Flavor Notes: Root Beer, Cherry, Toffee.
We roast this coffee to a medium roast level, with a syrupy body and balanced sweetness.
Uganda Silverback comes from Bulambuli, a district in Eastern Uganda near the Kenya border, at the foot of Mt. Elgon. The name for this coffee was inspired by Uganda’s most imposing yet gentle inhabitants, the Silverback gorillas.
This coffee comes from several cooperatives comprised of smallholder farmers who on average manage 0.45 acres farms. The coffee is grown between 1,500 and 3,050 meters above sea level. The coffee is then processed at the Bulambuli washing station. Those designed for a washed process were then machine pulped, fermented for between 12 and 72 hours, and washed. Finally, they were moved to raised beds, where they were dried for between 21 and 28 days, depending on the weather.
